Chipotle Pulled Pork!
I love pulled pork!
It smells as delicious as it looks and tastes even better than that. You should braise it slow, submerged in a sweet and spicy marinade so that the collagen breaks down and the meat falls from the bone in tender lip smacking beauty. I told you I loved it!
In this recipe the chipotle chili’s add a spiced smokiness to the pork while the brown sugar and molasses provide the sweetness.
You’ll need: a blender or food processor, a large roasting pan a large bowl a large spoon and a ladle.
One pork butt, bone in (about 15 lbs)
8 Cups Orange Juice
I small tin Chipotles (aprox. 200 mls)
4 Large cloves Garlic smashed and mashed
1 Cup brown sugar
1 Cup Molasses
1 Large Onion diced fine
2 tsp salt (or to taste)
Pre-heat the oven to 225 degrees Fahrenheit
Place the pork in the roasting pan fat side up
Blend the chipotles with the orange juice in the food processor until liquid
Mix the chipotle/juice mixture with the rest of the ingredients and stir well, pour this over the meat
Cover with a lid or tin foil and place in the oven
Uncover and spoon the marinade over the meat every hour or sothen replace the cover
Allow 6 – 8 hours to cook
The pork is ready when it falls freely from the bone and you can’t wait anymore!
